Recipes: PEANUT SAUCE (for Satay)

Ingredients
300g roasted peanuts
3 cm piece ginger
A piece of galangal
3 tbsp pounded chillies
2 stalks lemon grass
1 bombay onion, sliced
½ cup tamarind juice
1 cup sugar
Salt to taste

Method: Pound the roasted peanuts and set aside. Pound lemon grass, ginger and galangal and set aside. In a pan, stir-fry onion until soft. Add ground chillies and fry until fragrant. Add tamarind juice, ground peanuts, the other ground ingredients, sugar and salt. Simmer until sauce thickens. Serve as an accompaniment to Satay. (Serves 6 - 8)
